Microwave Omelet in a Mug

I am on weight watchers and I also love to cook so I am constantly looking for healthy food to cook up. I am someone who loves things that are unique but I also hate cooking things that are prepackaged. I always want to make something from scratch and I want it to be interesting and I want it to be easy because while I love to cook, I'm not an especially outstanding cook. So Saturday morning I tried this out for breakfast and wanted to share because from time to time I will probably going to be sharing recipes.

This recipe is 1 serving, very filling, and 4 weight watchers points plus.


1 Egg
2 Egg whites
2 Tbsp fat free cheese
3/4 Slice thick cut deli ham, chopped (I used Sarah Lee premium meats honey ham)
2 Tbsp chopped peppers (I used green and red strictly for color purposes. Also mine were frozen out of a Birds Eye freezer bag but you can use any color and fresh or frozen)
as veggies are all zero weight watchers points plus you could use spinach, onions, tomato, whatever you like in an omelet with or in place of the peppers and would get the same nutritional value



First thing to do is whisk the eggs together like you are making scrambled eggs. This is the first time I have ever had to separate egg whites so I first cracked an egg in to my mixing bowl and then I scooped the yolk out with my hand. I then did the same with the second egg and then used the whole third egg.

after you have mixed the eggs together you can pour all of your other ingredients in to the bowl and whisk it all, distributing the ingredients rather than allowing them to sit in a clump in the middle of the eggs


Next thing is spray some cooking spray on the inside of any mug you would like. Cooking spray is zero calories but it will keep your omelet from sticking to the inside of your mug.

Then just pour all the contents of the mixing bowl in to the mug. I just used a regular sized mug for this one (and it had R2-D2 on one side and a Storm Trooper on the other so bonus points for cool mugs)


I then put it in the microwave for 2 minutes. I let it go for a minute the took it out and realized there was still uncooked egg at the bottom and put it back in for another minute, but I would assume you should just leave it alone for the whole 2 minutes.

Let it be known that every microwave is different, and I have an 1100 watt microwave. If you have a higher or lower wattage in yours, the time will probably be different.


And viola! A quick, easy, healthy, breakfast. I know this wasn't my normal contend but sometimes I just want to share. Enjoy!
