All you need is your favorite boxed dry cake mix and 12 ounces of diet soda. If you have cans of soda in your house, those are 12 ounces. I have this 20 ounce bottle because it was cheaper than buying a 12 pack of soda cans plus i got to think the remainder. If you have to measure out the soda because you over did it like me, 12 ounces is a cup and a half. Also you could use regular soda but on weight watchers it was only 2 points if I used diet.
It's so simple. All you do is completely disregard the cake box instructions and simply pour your dry mix and your diet soda in to a mixing bowl and mix it until smooth.
Then fill 20 cupcakes about half full, for the proper points value, make 20 cupcakes. there are only 12 here because I only have one muffin tin and had to make 12 then take them out and make the rest.
They should look about like this when it's all said and done. This recipe can be done with any cake and any soda, the only rule of thumb is if you use a dark soda, also use a dark cake. For this example I used red velvet cake and diet Dr. Pepper, but I previously have made strawberry cake with diet 7up.
I liked the Strawberry and 7up cupcakes a little bit better than the red velvet Dr. Pepper ones.
I assume you could also pair any cola with plain white cake to make the soda flavor more prevalent, as with both of these it is very subtle under the flavor of the cake.
